The Cupcake

Any flavor or type of cupcake under the sun can be used- pick your favorite.  We typically use a box mix for our cupcakes.  If you’re looking for some great ways to jazz up a box mix and other cupcake baking tips, check out Two Sister’s post for baking perfect cupcakes.

The Buttercream Frosting

Most of the buttercream for all 3 cupcake designs is used to create a grassy spot for the cupcake toppers.  The grassy areas are buttercream colored with Wilton’s icing color “Leaf Green” and piped with frosting tip #233.  The grassy tops create a perfect spot for the cute cupcake toppers.

We use our buttercream recipe and mix it to a medium consistency for cupcake decorating.  If you’re looking to streamline the cupcake-making process, of course, store-bought frosting will work.  We’d recommend the Wilton icing pouches.  They come in multiple colors and include frosting tips that attach right onto the pouch.

The Cupcake Topper

The focal point of any cupcake is the topper.  Toppers can be made, like the sugar cookie bunny ears or the chocolate bunny bottoms.  Looking for a quick option?  Try edible wafer paper toppers like the adorable Easter Bunny and Chick cupcake toppers available from Sprinkle Pop.

The Sprinkles

Sprinkles are one of the easiest and quickest ways to dress up cupcakes.  They come in an array of colors, shapes, and sizes.  We chose a couple of sprinkle mixes by Wilton:

  • One mix of bright nonpareils for a border on the cupcakes with the wafer paper toppers.
  • An Easter mix that includes the cute little colorful Easter eggs to brighten up the grassy areas on the cupcakes.

To Decorate the Sugar Cookies

Round & star tips are great for beginners because they’re so easy to use.

To decorate the bunny ear cookies, start with the pink frosting and a small round tip like a #3.  You can also use a piping bag and cut the tip.  Begin piping lines back and forth to create the inside of the bunny ears.

Helpful Tip:  Before piping, use an edible marker to mark the placement of the pink inside the ears.

Next, use white frosting and a small star tip like a #16 to create a star pattern along the edge of the cookie.

To create a buttercream star, simply hold the frosting bag upright above the cookie.  Apply a small amount of pressure to the bag to create a star, then release pressure on the bag and pull up.

Assemble the Cupcake

Use frosting tip #233 to create the grassy area on top of the cupcake.  Apply pressure to the piping bag and pull up or away from the cupcake and release pressure on the bag.

Place the sugar cookie in the center of the cupcake, pressing it down into the cupcake until it is secure.

Add Easter egg sprinkles or any sprinkles of your choice for an extra pop of color to top off these sweet Easter bunny cupcakes.

Bunny Bottoms Cupcakes

Charming and clever, these bunny cupcakes feature a burrowing bunny bottom made out of chocolate candy melts.  We found the mold for the bunny bottoms in the seasonal aisle at our local Walmart.   Check out these similar molds on Amazon.

What You’ll Need:

  • batch of cupcakes
  • buttercream-colored with Wilton icing color “Leaf Green”
  • crushed Oreos
  • Wilton Candy Melts-Bright White & Pink
  • bunny bottom mold
  • microwave-safe bowl
  • piping bags or plastic bags
  • frosting tip #233

How to Make the Chocolate Bunny Bottoms

Pour the candy melts into a microwave-safe bowl and follow the melting instructions on the package.  Once melted, pour the mixture into a piping bag (a plastic bag will work as well) and cut off the tip of the bag.

For the pink pads on the bunny feet, squeeze a small amount of pink chocolate into the mold and allow it to harden.  To speed up the process, pop the mold into the freezer for about 5 minutes.

Create the rest of the bunny with bright white chocolate, filling in the rest of the silicone mold.  Put the mold back in the fridge for another 5-10 minutes until hardened.  Then remove the chocolates from the mold.

Helpful Tip:  If using a mold with teeny tiny details like the 3 tiny dots for the toe prints, try applying those details LAST.  Once the chocolates have been removed from the mold,  pipe on the dots or use a fine-tipped food-grade brush to paint them on.  A toothpick also works to apply intricate details.  Sometimes small details like that can be difficult to apply inside the mold without it getting messy.  Just paint or pipe them on at the end-it’s much easier!

To Assemble the Cupcakes

Use frosting tip #233 to pipe the grassy area on top of the cupcake.

Apply a small amount of crushed Oreos to the center of the cupcake.

Place the chocolate bunny bottoms on top of the Oreos so it appears as though the bunnies are headed underground.

Add some Easter egg sprinkles (or any sprinkles of your choice) as a final touch.
